Ingredients
- 3 lbs beef bones
- 1 lb beef brisket
- 1 onion, halved and charred
- 3 inch ginger, charred
- 6 star anise pods
- 1 cinnamon stick
- 1 tbsp coriander seeds
- 1 tsp fennel seeds
- 6 cloves
- 1 lb rice noodles
- 1/2 lb raw beef sirloin, sliced thin
- Bean sprouts, herbs, lime wedges for serving
- Fish sauce and hoisin sauce for serving
