Vietnam's most famous dish requires patience to create the complex, aromatic broth. The combination of star anise, cinnamon, and other spices with fresh herbs creates a soul-warming soup that's both simple and sophisticated.

Ingredients

  • 3 lbs beef bones
  • 1 lb beef brisket
  • 1 onion, halved and charred
  • 3 inch ginger, charred
  • 6 star anise pods
  • 1 cinnamon stick
  • 1 tbsp coriander seeds
  • 1 tsp fennel seeds
  • 6 cloves
  • 1 lb rice noodles
  • 1/2 lb raw beef sirloin, sliced thin
  • Bean sprouts, herbs, lime wedges for serving
  • Fish sauce and hoisin sauce for serving

Instructions

    Char onion and ginger over open flame until blackened

    Toast spices in dry pan until fragrant

    Simmer bones and brisket in water 3+ hours, skimming foam
