These beloved Polish dumplings have been comfort food for generations. The tender dough wrapped around creamy potato filling, then pan-fried until golden, represents the heart of Polish home cooking.

Ingredients

  • 3 cups all-purpose flour
  • 1 egg
  • 1/2 cup sour cream
  • 1/4 cup butter, melted
  • 1 tsp salt
  • 1/2 cup warm water
  • 2 lbs potatoes, peeled
  • 8 oz farmer's cheese
  • 1 onion, diced
  • 4 tbsp butter for frying
  • Salt and pepper
  • Sour cream for serving
  • Crispy bacon bits for garnish

Instructions

    Make dough with flour, egg, sour cream, melted butter, salt, and water

    Knead until smooth, rest 30 minutes covered

    Boil potatoes until tender, mash with cheese and seasonings

    Sauté onion until golden, mix into potato filling

    Roll dough thin, cut into 4-inch circles
