Ingredients
- 1 whole chicken, cut into pieces
- 2 preserved lemons, quartered
- 1 cup green olives
- 2 onions, sliced
- 4 cloves garlic, minced
- 1 tsp ground ginger
- 1 tsp turmeric
- 1/2 tsp cinnamon
- 1/2 tsp saffron threads
- 1/4 cup olive oil
- 1 cup chicken broth
- 1/4 cup fresh cilantro
- 1/4 cup fresh parsley
- Salt and pepper

Season chicken with salt, pepper, and half the spices

Heat olive oil in tagine or Dutch oven, brown chicken pieces

Remove chicken, sauté onions until golden

Add garlic and remaining spices, cook until fragrant

Return chicken, add broth and bring to simmer
