This ancient Middle Eastern dish has been perfected over centuries. The key to silky smooth hummus is removing the chickpea skins and using high-quality tahini. It's both simple and sophisticated.

Ingredients

  • 2 cups dried chickpeas
  • 1/2 cup tahini
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp cumin
  • 2-3 tbsp ice water
  • 2 tbsp extra virgin olive oil
  • Paprika for garnish
  • Pine nuts for garnish
  • Fresh parsley for garnish
  • Pita bread for serving

    Soak chickpeas overnight, then boil until very soft, about 2 hours
