Authentic tonkotsu ramen requires hours of simmering pork bones to create the signature milky-white broth. This labor of love results in one of Japan's most beloved comfort foods with incredible depth of flavor.

Ingredients

  • 2 lbs pork bones
  • 1 lb pork belly
  • 4 portions fresh ramen noodles
  • 4 soft-boiled eggs
  • 4 green onions, sliced
  • 1 sheet nori, cut into strips
  • 2 cloves garlic, minced
  • 2 tbsp miso paste
  • 2 tbsp soy sauce
  • 1 tbsp sake
  • 1 tsp sesame oil
  • Bamboo shoots (optional)
  • Bean sprouts for garnish

    Simmer pork bones in water 12+ hours until broth is milky white

    Braise pork belly in soy sauce mixture until tender, slice thin

    Soft-boil eggs for 6 minutes, peel and marinate in soy sauce
