Ingredients

  • 1 whole chicken, cut up
  • 4 scotch bonnet peppers, seeded
  • 6 green onions, chopped
  • 4 cloves garlic
  • 2 inch ginger, peeled
  • 1/4 cup soy sauce
  • 1/4 cup lime juice
  • 2 tbsp brown sugar
  • 2 tbsp allspice berries, ground
  • 1 tsp thyme
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tbsp vegetable oil

    Blend all marinade ingredients until smooth paste forms

    Score chicken skin and rub marinade all over pieces

    Marinate 4+ hours or overnight in refrigerator

    Grill chicken skin-side down first, 6-8 minutes per side
