This hearty Irish dish was originally a way to use leftover roasted meat. The combination of savory lamb, vegetables, and fluffy mashed potatoes creates the ultimate comfort food that warms both body and soul.

Ingredients

  • 2 lbs ground lamb
  • 3 lbs potatoes, peeled
  • 2 carrots, diced
  • 1 cup frozen peas
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 cup beef stock
  • 2 tbsp Worcestershire sauce
  • 1 tsp thyme
  • 1/2 cup butter
  • 1/2 cup milk
  • 2 egg yolks
  • Salt and pepper

Instructions

    Boil potatoes until tender, drain and mash with butter and milk

    Beat in egg yolks, season with salt and pepper, set aside

    Brown lamb in large skillet, breaking up with spoon

    Add onion and carrots, cook until softened

    Add garlic and tomato paste, cook 2 minutes

    Add stock, Worcestershire, thyme, and peas

    Simmer until thickened, transfer to baking dish

    Top with mashed potatoes, bake at 400°F for 25 minutes
