Ingredients

  • 3 lbs beef flank steak
  • 2 bay leaves
  • 1 onion, quartered
  • 2 bell peppers, sliced
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 can crushed tomatoes
  • 1/4 cup tomato paste
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/4 cup olive oil
  • 1/4 cup white wine
  • Salt and pepper
  • White rice for serving

Instructions

    Boil beef with bay leaves and quartered onion until tender, 2-3 hours

    Remove beef, cool, and shred with forks, reserve broth

    Sauté sliced onions and peppers in olive oil until soft
