Ingredients

  • 2 cups dried black beans
  • 1 lb pork shoulder, cubed
  • 1/2 lb bacon, chopped
  • 1/2 lb chorizo, sliced
  • 1/2 lb beef short ribs
  • 2 onions, diced
  • 6 cloves garlic, minced
  • 2 bay leaves
  • 2 oranges, juiced
  • 2 tbsp olive oil
  • Salt and pepper
  • White rice for serving
  • Collard greens for serving
  • Orange slices for garnish

Instructions

    Soak black beans overnight, drain and rinse

    Brown all meats in Dutch oven, remove and set aside

    Sauté onions and garlic in rendered fat until golden

  4. 4

    Add beans, meats, and bay leaves, cover with water

  5. 5

    Simmer 2-3 hours until beans are creamy and meat is tender

    Mash some beans against pot sides to thicken

  7. 7

    Season with salt, pepper, and orange juice

  8. 8

    Serve over rice with collard greens and orange slices
